Once you move past a honing steel there are two easy options: an electric sharpener, or a manual rolling sharpener. Both skip the learning curve of a whetstone. They get there in very different ways.
This is not really a question about convenience. It is a question about how long you want your knives to last.
Electric: fast, and aggressive
The appeal is obvious. A few seconds, a few passes through motorised wheels, and a dull knife cuts again.
What you give up is steel. Electric sharpeners remove a lot of it, which shortens the life of the knife. High speed grinding also generates heat, and heat can affect the temper of a thin blade. Most models use a fixed angle, which will not suit every knife in your block.
Rolling: slower, and gentler
A rolling sharpener uses a diamond abrasive to grind a new edge with far less metal removed. You control the pressure and the pace.
With a dual-angle base you match the angle to the knife: 15 degrees for fine Japanese blades, 20 for robust European ones. It takes a minute or two rather than a few seconds.
That minute is the whole point. It is quiet, and you can feel what is happening.
Which one is for you
An electric sharpener suits someone who wants speed above everything, uses inexpensive knives, and is not worried about wearing them down.
A rolling sharpener suits someone who has spent real money on knives and wants to keep them for decades.
Neither is wrong. They are built for different people.
