What is the diamond disc and the ceramic honing disc for?

Can I sharpen any knife with the Oakstone Rolling Sharpener?

Yes, our rolling knife sharpener works on most smooth-edged blades: kitchen knives, chef’s knives, cleavers, hunting knives, folding knives, and Damascus steel blades.


Not suitable: Serrated knives (e.g. bread knives) and ceramic blades (non-magnetic).

Can I sharpen my one-sided ground Japanese knife with Oakstone?

Absolutely. Oakstone’s magnetic guide holds the blade steady so you can hone either side or just one side for single-bevel Japanese knives. Choose your 15° or 20° setting and roll only the side you need.

How do I sharpen extra-tall blades (e.g., Chinese chef’s knives)?

Place your Oakstone sharpener on a stable surface or atop a cutting board to raise it to the blade’s height. Then sharpen as usual. Our manual knife honing tool adapts to any blade size.

How long does the first sharpening take, and how often should I re-sharpen?
  • First Sharpen: 2–6 minutes to establish a perfect 15° or 20° edge (up to 10 minutes for very hard Damascus).

  • Touch-Ups: 3–5 quick rolls per side each 2–4 weeks, depending on use. Regular knife honing keeps your kitchen knives laser-sharp.

How long does the diamond disc last?

Diamond is the hardest known material. With proper use, avoiding excessive pressure and moisture, the industrial diamond sharpening wheel lasts for years and rarely needs replacement.

How long does the ceramic honing disc last?

Oakstone’s food-grade ceramic disc is designed for durability and precision. With normal use, 3/5 quick passes per sharpening session, you can expect the ceramic honing wheel to retain its fine grit for 1,000/2,000 sharpening cycles before showing wear. That equates to several years of home-cook maintenance.

Because ceramic is harder than steel, it resists glazing and maintains a smooth finish, so you’ll rarely need to replace it unless it suffers a hard impact or chip. Just wipe it clean and dry after each use to extend its lifespan.

What blades can’t I sharpen with Oakstone?
  • Serrated knives (bread, scalloped edges) will damage the serrations.

  • Ceramic knives are non-magnetic and won’t secure to the guide.
